Healthier Fish Cakes
Options
I made these for dinner using leftover Rainbow Trout. Delicious IMO. My trainer wants me to aim for 25g of protein per meal and 1 serving came at 23g. This makes two servings.
Fish Cakes (Preheat Oven to 400 F)
1 cup mixed beans
1 egg white
1/ cup diced red onion
Fresh Cilantro
4 oz leftover Fish (I used Rainbow Trout)
Mash beans with diced onion, minced cilantro and egg white, flake fish and add. Press mixture in a non stick mini loaf pan and bake for about 20 minutes or until top is Golden Brown. Cut loaf in half. I do not cook with salt and sodium depends on the beans you use.
1 serving = 222 Calories / 20.5g Carbs / 5 g Fibre / 23 g Protein
I made a mini cucumber salad for on the side .
