Pork chops with Honey-mustard gravy and Apple slaw
Dinner tonight:
1 green apple, sliced into matchsticks
juice of 1/2 lemon
1/2 head red cabbage, shredded
2 scallions, sliced on an angle
4 boneless pork loin chops
grill seasoning
1 tbs. EVOO
1 cup chicken stock
1/4 cup grainy mustard
1/4 cup honey'
2 tbs. apple cider vinegar
1 tbs. fresh thyme
1. In large bowl, toss apple with lemon juice. Add cabbage and scallions. Divide among four plates.
2. Season pork chops with grill seasoning. In a large nonstick pan, heath EVOO over med high. Add the chops and cook, turning once, until browned about 8 minutes. Place on top of slaw.
3. Add the chicken stock, mustard, honey,vinegar and thyme to pan and boil. Cook until reduced, about 1 minute. Pour gravy over chops.
