Veggie hash

1/2 cup chopped bell pepper
1/2 cup chopped red onion
1 tbs minced garlic
1 serving frozen sweet potato fries.
1 cup choppee cooked (or deli) turkey, ham, roast beef, or chicken.
Pat of butter or splash of oil.
put butter in a pan and melt-sautee peppers, onions, and garlic until tender. remove from pan. add fries to pan (or you can bake them-but i was lazy and didnt want to wash extra dishes.
cook through-mash them a little!
Remove from pan-put in meat and cook until browned or warmed through-whichever.
add everything back to pan!
Eat as is.
OR
Hollow out the middle and crack an egg (or two)-put on a lid and cook until whites are done (or the whole thing is done if you arent a runny yolk person).
You can add celery, spinach, corn, jalapenoes, whatever you like! This recipe made about two servings for me today-i added a little more veggies though.
Perfect for the "hungry but not ravenous" "i dont want to dirty 10 pans" kind of days
