I found this interesting article giving a few suggestions of which vegetables give most benefit in either raw or cooked state.
For instance- you should store tomatoes at room temperature, have them raw for most vitamin C, or cooked into a sauce to break down the cell walls and increase the availability of the anti-oxidant lycopene.
