This is a lovely tasty low fat dinner. (serves 1)

Coat 1 chicken breast in about half a teaspoon of jerk seasoning.
Leave for a few minutes.
Cook some plain white rice & 5 mins before the end of cooking add some frozen peas.
Griddle/grill the chicken breast, either whole or in strips.
Mix some chopped tinned pineapple with some raw red chilli.
Serve with the rice & chicken.

Based on roughly 3oz chicken breast, 150g rice, 1/2 cup peas, 1/4 cup pineapple & 1/4 of a red chilli

As a luxury or for dinner guests you can add 2 tbsp of cream & 1 tbsp dessicated coconut to the rice, lovely but calorific!!!
