Lemon Sorbet
Makes 8 servings.

A refreshing blend of lemon and mint makes this a tasty treat for a hot summer day.

Ingredients

4 cups of water
1/2 cup Splenda®
1 tsp. fresh lemon rind
2/3 cup fresh lemon juice
8 fresh lemon slices
8 peppermint leaves

Directions

1. Boil water in a pan.
2. In a large bowl, add boiling water and Splenda®. Mix until dissolved completely; cool slightly
3. Stir in lemon rind and juice.
4. Pour mixture into a 9-inch square pan. Cover and freeze.
5. Remove from freezer; let stand about 10 minutes.
6. Scrape sorbet with a spoon; spoon into small dishes.
7. Garnish with fresh mint and lemon slices.
