Quinoa...

what do you do with it? and is the serving size on the package cooked or dry?

    I think you could probably use chicken if you don't like tofu. I would follow the directions on the package of quinoa to make the recipe, since the ones on the site don't seem accurate.

    The recipe measurements are for a cooked half cup per serving.
    I've also seen some great stuffed peppers that use quinoa.

    The serving size is for dry quinoa. The nice thing is you can cook it ahead of time, unlike oats. I always eat it with egg whites and usually use stevia and cinnamon or blueberries in it.

    I like it in soups but one of my favorite ways to use it is to saute red bell pepper, corn cut off the cob and cilantro. Add it to the already cooked quinoa, sprinkle with orange juice and refrigerate for a couple hours before eating. Tastes so fresh!

    I prepare Long Grain Brown Rice, TVP and Quinoa in equal amounts; mix them up with a package of Fried Rice Seasoning, Chopped Green Onions, Chopped Carrots, Chopped Cilantro and Chopped Jalapeno Peppers.

    It's great, fills my hunger for rice while being high in Protein and fiber. You can also add any chopped veggies you happen to have laying around.

    I put it in indiviual 8 oz containers and have one every day.
