Cheesy Garlic Meatballs

1 tablespoon olive oil

1lb of ground beef 93/7 (or you can use whatever ground meat you want)

2oz bread crumbs

1 egg

1 small onion, diced

3 oz mozzarella cheese, diced

salt and pepper to taste

1 clove of garlic, crushed

1 tablespoon parsley (though I used Italian seasoning)

1 jar of pasta sauce


METHOD

combine ground beef, bread crumbs, beaten egg, onion, salt and pepper, garlic and parsley in a bowl using hands to ensure its well mixed...

wrap pieces of diced cheese in the mix and form into meatballs...(like the cheese is in the middle of each meatball)...

heat oil in pan (i like to spray with a little cooking spray first to help avoid stick)...

brown the meatballs in the pan for about 5 minutes...

add the jar of pasta sauce and simmer on low for 20 minutes...


makes 16 meatballs/4 serves/a little under 400 calories per serve of meatballs...

that's it!!!!

great served with a little whole wheat spaghetti or some garlic bread and a green salad...
