recommend calories sooo high??

600-1000 is is really, really low, especially since you're breastfeeding, which supposedly takes about 500 calories a day. Counter-intuitive though it seems, chronic undereating can make it harder to lose weight (not to mention the impact it can have on milk production).
You've got loads of options available to you, even if you've gone (raw?) vegan. Use olive oil as a dressing. Add avocado and nuts to your salads. Have a glass of almond milk with your meals. Make green smoothies to drink during your day. Eat some veggies other than spinach - I love spinach to pieces, but it's very low-cal. Even a sliced banana with some peanut butter would be an easy boost.
As I saw someone point out elsewhere on these boards, you didn't get overweight only eating 600 or even 1000 calories a day. I'm sure you can think of higher-calorie foods that you enjoy that fit with your current dietary restrictions.0
