Pizza Burger w/ Spinach, Tomato, Feta, & Hummus

DELISH!

My own creation today for lunch. It. was. heavenly.

1 Whole Wheat sandwich thin (I use Trader Joe's Multi-grain Slims
1 Morningstar Tomato & Basil Pizza Burger
1/2 cup raw baby spinach
1/2 roma tomato - sliced
1/2 oz Fat Free Feta Cheese (I use Trader Joe's)
1 tbsp Hummus (I use Trader Joe's Garlic Hummus Dip)
1 tbsp Reduced Fat Mayo (I use Trader Joe's Reduced Fat Mayo)

Spread mayo on one side of sandwich thin, hummus on the other. Heat the burger patty in the microwave then sprinkle fat free feta on top and nuke for 15 - 30 more seconds. Pile the sandwich thin with patty, spinach, and tomato. Top it and eat up.

SO YUM!!!

My version with TJ ingredients is 327 calories.

    Hummus is chick peas (garbanzo beans, you can buy them canned or cook them from dry), blended up with some tahini, sometimes olive oil, garlic, lemon juice...depends on what you like. Trader Joe's sells all kinds of flavors..if you have a TJ close by, pick up a small dish and try it. It's delish and an AWESOME fiber and protein source....low cal too.

    There are all kinds of recipes for it online too. Find you one you like and mix it up. I think you will be hooked. Most people are :)
