I want to eat lunch, but I have absolutely no idea what to make! Does anyone have light, healthy recipes that I could easily make at home?

my lunches during the work week consists of
6 oz of chicken baked at 375 for about 20-25 minutes
lightly seasoned with Mrs Dash Lemon Pepper
about 2oz of Kraft Blended Cheese
i then microwave for 2 minutes at work
every now and then i may add some steamed broc to mix things up0 -
My go-to for lunch is usually salad... so easy to throw together and you can adjust it based on what you're in the mood for. I usually use baby spinach as my base, add some carrots or other raw veggies, some protein (grilled chicken, cooked ground turkey/beef, tuna, swiss cheese, etc.), some healthy fat (avocado, nuts, etc.) and sometimes some beans for extra protein/carbs.0

i just made a really good turkey wrap which I made with a low carb tortilla; baked turkey breast meat (3 oz); lite mayo (1 tbsp); chopped tomato and mixed greens. it came in around 200 calories and was really filling. i also like to make blt's with low calorie bread; lite mayo; low fat cheese; lettuce and bacon salt (sometimes i use finely crushed bacon bits) - this is also very good. another favorite is shrimp cocktail with a salad.0

My Lunch is usually just a Protein bar. Something Like Met-Rx or Supreme. Sometimes a Cliff bar also. Im to lazy to make something at home to bring for lunch, unless there is a good leftover. But working nights,I don't always have access to a nuker to heat up the food.0

Don't try to eat "light", eat healthy within your allotted calories. My "lunch" was at dinner time when I was working. During my weight loss phase, I took either a salad or container of cut up veggies (5-6 different kinds) with dressing or dip, a cooked-at-home and frozen meat-based main dish or serving of meat, with a small serving of fruit for dessert. I made fresh hot tea instead of having a sweetened drink at break time. Since I refused to spend the money to eat in the cafeteria or get stuff from the vending machines, if I packed a good lunch, that's what I ate. I cooked on my days off and froze portions so I could just pull something out of the freezer and put it in my lunch bag. I packed the salad or veggies every day, but you could prepare them several at a time if that helps. Now that I'm retired, I still have a salad or veggie plate and a meat dish for dinner--usually around 600 calories for something really tasty and healthy.0

Peanut butter on whole wheat bread is always a nice lunch with a piece of fruit. Chicken cut up in a salad is yummy. Yogurt with berries is good too. Turkey sandwich on whole grain bread with lots of veggies (if you like veggies on your sandwich) and some mustard is a nice lunch. If you get tired of bread you can put all the fixings in a pita or a wrap. If you have a microwave- left overs are really good too.0
