Yummy broccoli bok choy soup!
Healthier Cream of Broccoli Soup (very flavorful and creamy without needing any cream, potatoes, or flour)
(You can use many other veggies-cauliflower, asparagus, artichoke)
Cut 2 heads of broccoli, keep stems- just cut them small
Cut 2 heads of bok choy (stems into small pieces, separate leaves)
Put 1 tbl unsalted organic butter in a large hot pot on high heat
And 1-2 large cloves of fresh pressed garlic
Use wooden spoon to sizzle garlic
Add 1 quart low sodium chicken or veggie stock/broth (I use veggie broth)
Once it boils add broccoli and bok choy stems, add broccoli florets after a few minutes, add bok choy leaves last
Don't add more liquid
Everything will be in tender after boiling about 10 minutes
Transfer carefully to food processor or blender (maybe 1/2 at a time)
Season to taste (a little salt and paprika, or trader joes "everyday seasoning")
Add 14-1/3 cup 2% organic lactose free milk
Blend!

Makes 6 servings. 116 calories per serving. (The servings are large)
