cheesy Egg Scramble

This is my all time favorite way to eat scrambled eggs. I used full fat ingredients because my bf doesn't want me to get any reduced fat things (pain in the butt but I deal) but you can always modify it. :)
This is a single serving. Calorie count is for full fat meal.


2 eggs (3 egg whites)
1/2 Tbsp. Half & Half (or skim milk)
1 Tbsp. Chopped Green Pepper
1 Tbsp. Chopped Onion
1/2 Tbsp. Butter (or margerine)
1 slice American Cheese (Kraft)

Sauté peppers and onions in butter. Whisk together eggs and half & half. After vegetables are soft, add eggs and scramble. When almost fully cooked.. Place slice of cheese on top of eggs, cover and turn off heat. Let sit til cheese is melted.

    That sounds yummy.

    I make myself a scrambled egg a lot in the evenings because I dont' get home until about 7:30pm and it's quick and easy.


    1 egg - whisked with about 1 TBS of water
    pepper and basil to taste
    1/2 c of sauteed onion/peppers (I keep them chopped up in the freezer)
    1/4 c. shredded cheddar cheese

    I spray a small skillet with butter flavored Pam and saute the onions and peppers. When they're soft, stir in the whisked egg. it only takes a few minutes for the egg to cook, then I sprinkle the cheese on top, cover and let it sit until the cheese melts.
