Fry the diced onion, diced tomatoes and diced garlic in the oil, then add the diced chicken. then literally add everything else, bring to the boil, stir and then simmer for about 40 minutes, stirring once in between.

I'm keeping my meal low carb so having it with blanched spinach tossed in garlic butter, and I'm serving the chicken stroganoff for the kids with carrots and pasta.
