Just made a strawberry poke cake and it is delicious and EASY.

1 box of yellow cake mix (prepared using eggs, water and unsweetened applesauce instead of oil)
1 box sugar free strawberry jello mixed with 2 cups hot water
1 container of light cool whip

Bake cake as usual. Pole holes in the cake with a fork. Pour jello over cake. Let cool and ice with cool whip!

Tastes like strawberry shortcake!!!

Serves 12

Comes out to be less than 200 calories per serving.

That sounds very nice. Love the name. :flowerforyou:
  • Love the idea of using applesauce instead of oil. I couldn't tell any difference at all. It really is very good and you can enjoy a large piece for under 200 cals. Not to bad for a treat!

My wife makes this all the time! It is awesome! She puts fresh strawberries on top and it makes it even better!

Do you think this would work in cupcake tin?

I made this on Easter but instead of using jello, I used the sugar free-fat free pudding (cheesecake flavor). It was such a huge hit that everyone was begging for the recipe!

    I don't know why it wouldn't

Does the pudding soaks into the cake? or do you use the pudding like icing?
