**Clean Eating** Uncle Johnny's White Bean Soup

I got the recipe out of Dr. Ian Smith's Shred book. It is really good and so simple to make. Vegetarian and Vegan friendly. It turned out so much better that I expected it to.

Uncle Johnny's White Bean Soup
Total time: 30 mins or less
Servings: 4 (1 cup each)
Per serving: Cal: 237
Fat: 11g
Protein: 8g
Fiber: 8g

2 cups of cannellini beans (do not drain)
3 tbsp olive oil (calls for 4 tbsp but I didn't need that much)
1 medium onion, finely chopped
1 1/2 celery stalks, fnely chopped
1/2 carrot, finely chopped
15-ounce can plum tomatoes or stewed tomatoes (do not drain)
15-ounce can chicken or vegetable broth
salt and pepper to taste

Puree one cup of beans in a food processor or blender. Heat oil in a large saucepan and add the onion, and cook until soft about 3 minutes. Add the celery, carrots, and tomatoes, and cook for 7 minutes more. Warm the broth and pour it into the saucepan. Gradually stir in the beans and bean puree. Let simmer for approximately 15 minutes. Season with salt and pepper. Serve.
