Quinoa

Anyone eat this?

I'd like to try it but I'm not gonna lie...it looks VERY unappetizing. How is it used? Cooked up like oatmeal? or more like a rice substitute?

    I have a friend who does eat it for breakfast, like oatmeal, but I personally use it as an alternative to rice. It's unreally bland, so you absolutely have to season it well and cook it in stock or something. I like the texture, but my husband is a bit put off by the odd little crunch that it has....

    Its more a rice substitute. But you can use it in many ways. I sometimes boil it in water with a low sodium stock cube, that gives it flavour (it is bland on its own) or you can add your own herbs and spices. I like to have it with a salmon fillet and veggies for a healthy meal. Or, like today, I made a quinoa laksa (Ive just done a post in the recipe section with a link)... some people will add it to salad, or use as a couscous substitute - so many ways! Its a good source of protein and fibre.

    I use it more as a rice substitute... it's very good. One of my favorite recipes is on the box & it's for a pilaf.

    I made quinoa for the first time yesterday, and I was pleasantly surprised.

    I made red quinoa, and it tasted slightly nutty with a bit of a crunch. I will say it did need seasoning. Then I added some cubed, roasted butternut squash, and... yum :o)
