Okay all my life I haven't liked pumpkin. My husband and kids will eat pumpkin scones, and he loves pumpkin soup. His mum did the old try and force feed pumpkin thing , so that really put him off. Anyway yesterday I had a butter chicken wrap (petrol /gas station meal) and didn't realise it had pumpkin in it. Damn it was nice. Turns out my big sister was right about curry pumpkin. So as I am always trying to eat new food and get the kids to do the same, I would like to experiment with pumpkin. I mean it's a really cheap veggie here when in season, and I know it's got loads of nutrition.

That said, what is your favourite pumpkin dish? It's getting cooler in Australia, so roasts, stews etc . Dishes that freeze WellCare great :)

    you can put it in chili. substitute your beans or some of the tomatoes for pureed pumpkin is fantastic. works well if you season with cumin, a little cinnamon, and chilli powder. i also use onion powder.

    if i have it on hand, i put a cup or two of pureed pumpkin in everything from marinara sauce to veggie soups. it hides really well since it has such a muted flavor. great in pancakes too!

    (sorry, don't have any recipes off the top of my head, but i hope those ideas help!)

    We're half a year away from pumpkin in season again here. Last year I boiled it then mashed and froze it. The thinking there was that the size would reduce for storage. So last year I mostly just added it to smoothies.. it really expanded the smoothie with few calories. I was doing 1200 calories a day then, dedicated... I remember just eating it boiled and mashed as a meal.. I was so hungry it tasted good.

    I've used fresh pumpkin, peeled and cubed, in beef stew. I just add it with the other root vegetables.

    You can simply roast pumpkin in the oven (as it is a winter squash). There is also the option of steaming it.

    The seeds can be boiled (after you get the stringy stuff off), then roasted in the oven.

    I made a pumpkin, yam, coconut curry that made me love life. It was a cinnamon, clove, Jamaican style curry
