What should I track?

I track Calories, Carbs, Fats, Protein, and Fiber. I cannot figure out what I should track for the last option in the food journal on MFP.
I'm always way over on Vit A and Vit C. I'm also always over on sugar because I eat a lot of fruits and veggies. I'm under on Sodium almost all the time. And I pretty much always meet my Iron and Calcium requirements.
So what should I track and why?

It's up to you. Personally I wouldn't want to track anything more than I had to, so the need to track somethign else just because there's an empty slot doesn't jive with me.0

Didn't realize that I could just choose 'none.'
