The latest attempt at vegetarianism. Not going to lie: There's been some meat here and there on the diet, but really only when my back is against the wall (AKA when I'm with my finicky family). Other than that, it's been easy enough, and this dish alone got me through two dinners and about three lunches. Nutritionals by Food Network.
