I discovered Tofu Shirataki noodle substitute made by House Foods. They are in the refridgerated section, probably at your healthy market. I got mine at Sprouts. Today I took some chicken breast, chicken stock, peas and carrots, onion, garlic and added the noodles . Some salt, pepper, parsley and it was amazing. Taste like a traditional chicken noodle soup only the calories in the noodles for the whole packeage was 40 calories. My 1 cup serving of soup came out to be 35 calories a cup. Note though the noodles have tobe rinsed, drained, then boiled for 2 minutes, drained again then add to the pot.

I've even made faux mac & cheese with it using low-fat shredded mozzarella cheese and light laughing cow swiss cheese. It kept me out of the kid's mac & cheese.0
