Breakfast for Dinner?

So here's the deal I have a bunch of turkey sausage links in my fridge and I'm not sure what to do with it. Should I just make a typical breakfast or does anybody out there use turkey sausage in another dish or have a good recipe that utilizes turkey sausage?

dice it up and through it in an omlet. yes it's breakfast for dinner but i work nights and don't follow typical standards. Omlets are good anytime!0

It really depends on your taste, but I'd chop an onion (and maybe celery, carrot, and anything else in the fridge that wants to jump in the pan!) and start to brown them, as they get soft, toss the sausages in. Brown it all till the onions (and veggie friends) get carmelized. Take the sausages out, cut them up (kinda like coins), and toss in a can of diced tomatoes and a can of beans. any kind of beans you like - not seasoned or baked beans - just plain canned, drained and rinsed beans. Heat thru and in my world I'd add in a mess of hot sauce, but that's just me. Very filling, reasonably low carb, high protein comfort food..
Oops, edit: put the sausages BACK in the pan with the tomatoes and beans...kinda misses the point without them, right?0 -

Chop them B's up and throw 'em on a tortilla with some melted shredded cheese, bacon bits and hot sauce!0

Squeeze them out of their skins and form into small meatballs. Brown them in a skillet with some choped onion. Add a spoon of wholegrain mustard and some cream (or lower cal alternative). Stir through some cooked pasta.
Some sliced mushrooms work well in this too.0 -

I use it for EVERYTHING! If I make a dish the uses hamburger....I replace with turkey sausage!0

u could cut them up and make a quiche with veggies thrown in and use what u don't eat later in the week as a quick breakfast or dinner. I would do cut up sausage links, eggs, mushrooms, bell peppers, spinach, little pepper, little cheese, maybe a little kale. then eat it with fruit. yum0

We have "breakfast" foods (pancakes, waffles, sausage, bacon, omelets, hash browns, etc.) for dinner at least once/week.0

Breakfast for dinner is just fine but you can make just about anything with sausage. Here are a couple of my favorites. Can't find the same recipe I use for zuppa toscana online but the one below is similar:

Pretty much any recipe with ground beef or turkey, you can substitute crumbled sausage - just remove the casing and brown.0 -

It's adapted from a Nigel Slater recipe. He's one of my favourite chefs, I love his relaxed approach to cooking.0

This is one of my faves:
3/4 pound(s) uncooked turkey sausage(s), spicy-variety, casings removed
1 medium uncooked onion(s), chopped
1 medium green pepper(s), chopped
28 oz canned diced tomatoes
10 oz frozen green peas, thawed
2 Tbsp canned tomato paste
1 tsp dried oregano
1 tsp dried basil
1/2 tsp dried thyme
1/2 tsp fennel seed
1/2 tsp table salt, or to taste
1/2 tsp black pepper, freshly ground
12 oz uncooked whole wheat pasta, ziti, cooked according to package directions
6 oz shredded part-skim mozzarella cheese
Position the rack in the center of the oven and preheat the oven to 350°F.
Crumble the sausage meat into a large saucepan and brown over medium heat, stirring often, about 4 minutes.
Drain off any fat, then add the onion and bell pepper. Cook, stirring often, until softened, about 3 minutes.
Stir in the tomatoes, peas, tomato paste, oregano, basil, thyme, fennel seeds, salt and pepper. Bring to a simmer, then reduce the heat and cook uncovered 5 minutes, stirring often.
Stir in the cooked pasta and half the cheese. Spread evenly into a 9- X 13-inch baking pan. Top evenly with the remaining cheese.
Bake until the cheese has melted and the casserole is bubbling, about 20 minutes. Let stand 10 minutes at room temperature before slicing into 8 pieces. Yields 1 piece per serving (makes 8 servings)0
