New here and looking for some advice.

I'm starting the Insanity program today. I've been working out 6 days a week for a month now all Jillian Michaels dvds. Yoga Meltdown, Killer Buns and Thighs, and Extreme Shed and Shred with some tabata workouts as well. But it was getting kind of boring so my boyfriend and I borrowed the insanity dvds from a friend of ours. My biggest concern is trying to get us both eating well. It's hard to make a decent healthy meal because we are on opposite schedules me on days him on midnights and only get 5 days a month together. He is so picky, doesn't eat "rabbit food" as he calls it and we're not huge fish or turkey lovers but we love chicken. We'll be working these workouts in probably while our 8 month old is taking a nap.
My question is if you have a busy schedule like ours and have a picky eater what are some good recipes that are quick but we can both agree on but still fuel our bodies with enough energy for the Insanity workout.
I'm looking to lose 35 pounds to get back to my pre-baby weight.
One last thing, any of you that have done Insanity before any advice to give? How did you keep your motivation up? I've read tons of reviews and testimonials and just trying to get direct advice.
