The Diet plan that my husband and I are trying requires oatmeal for breakfast but my other half is always in a hurry in the morning, only time for on the go options.... So to make this diet work for us, I started experimenting with sugar-free oatmeal cookies, then bars and have finally came up with my new favorite and fast low calorie oat muffins.....

Stephy's Oat Delite Muffins

1 tablespoon coconut oil (melted)
1 banana, mashed
1/2 cup applesauce, unsweetened
 2 egg whites, beaten
 1 teaspoon vanilla extract
 1 1/2 cups vanilla coconut milk 
1 teaspoon ground cinnamon
 2 1/2 cups [QUICK ]steel cut oats
( I used Bob's Organic Red Mill Brand )
1 tablespoon chia seeds or ground flax
 1/2 teaspoon salt
1 teaspoon baking powder
1/2 -1 teaspoon Stevia or use 1/2 -1 cup honey

Optional: 1/4 teaspoon nutmeg & 1 tablespoon fresh lemon juice..

Directions
Preheat oven to 350 degrees.
In a large bowl mix together, oats, chia seeds, cinnamon, salt, baking powder, stevia.
In another bowl mix together banana, applesauce, egg, vanilla, milk and coconut oil together.
If you are using honey instead of stevia, add it to the wet ingredients now.
Pour the wet ingredients into the dry and mix to combine.
 Spray cupcake liners with cooking spray.
Place batter into liners, you can add desired filling ingredients,
(i.e raisins, blueberries or nuts) pour more batter to fill the cups.
Bake for 25-30 minutes until a toothpick in center comes out clean.
