Recipes to turn non healthy eaters?

I'm going away next week with my parents and their super unhealthy. I'm going to be cooking dinner every night of the week and need a few amazing healthy recipes to prove it can be done. Whats your fave healthy dinner recipes?

    What sort of food are your parents into?

    Generally, I can highly recommend the Hairy Dieters cook book - they've taken traditional recipes and cut the calorie content and the recipes I've tried so far are yum!!

    One of my faves is chicken, onions, peppers sauteed with a tablespoon of water in place of the oil. When they are cooked, season with a bit of cumin and red pepper flakes, add some salsa, put it in a homemade tortilla that has been spread with a tablespoon or two of mashed avocado. top with a couple of tablespoons of quark cheese- it's lower in calories than yogurt! I love these and could eat them every day. they are very filling- some days I can't finish one.

    Why not make recipes they would usually eat and healthy-ify the recipes?

    Ie it is super easy to add a serving or 4 of veges to most dishes upping the nutritional value. For example shepherds pie: add extra vegs chopped small, carrot, peppers, zucchini, use lean mince (or pour boiling water over the mince before you cook it) and make the pie two thirds mince meat and only the top third potato (you can also add other root veges to the potato mash to up the nutrition).

    Same for fish pie ( use low fat milk to make the white sauce), add veges to the fish (chopped green beans, spinach)

    You could make low fat mac and cheese and add veges such as broccoli and spinach to the dish. You could make lasagne and add peppers, aubergines, mushrooms, grated carrot. You could make bacon and egg pie (half the bacon and add a ton of veges).

    There are also lots of meals that you can make that will be as healthy or unhealthy as you want. Ie baked potatoes and chicken (have a small potato, chicken and make yourself a side salad). You could do a roast, there are a ton of recipes out there for roasting potatoes with as little oil as possible. You can always give yourself an extra portion of veges and let your parents eat an extra carbs!

    this! I have health-fied my meat balls - using leaner meat, little to no oil, packing them with garlic and onion, making the sauce with just tinned tomatoes and lots of fresh herbs and not using cheese. GF pasta instead of normal pasta and watch the serving size, then be sure to have lots of veggies on the side (mmm spinach!)

    eating well .com has some awesome recipes that are healthy and extremely tasty. I use them to make weekly menus and so far have never been dissappointed. One of my favorites that has now become a family fav is the cajun catfish, with baked corn and okra. I sub tillapia. it is quick and easy and great tasting. Good Luck!!
