    wouldnt a baked chimichanga just be an enchilada without sauce on top?

    almost. an enchilada has corn tortilla. it would be a buritto. that got crisped in the oven.

    Boom - dinner. This suddenly became "on the menu" for tonight.

    I'm making these tonight. Only 380 calories per Chimi.

    8oz reduced fat cream cheese (softened)
    8oz shredded mexican blend cheese (or cheddar)
    2 Tbsp taco seasoning
    1 lb cooked chicken, shredded
    8 soft tortillas (I use a fat free/high fiber one)

    Mix cream cheese, shredded cheese, and taco seasoning. Fold in chicken. Fill tortilla with mixture. Tuck in sides of each tortilla. Lay seam down on greased cookie sheet. Bake at 350 for 15 min. Turn Chimi's over and bake another 15 minutes. Serve with light sour cream, lettuce, or salsa. Serves 8

    Thanks for sharing! I saw this recipe yesterday and made them for supper... I modified it with fat free cream cheese, mrs. dash fiesta lime seasoning and burrito wraps.... served with steamed frozen whole green beans for a total of 410 calories and SUPER filling :o)

    Made them last night - SO GOOD!!!!!!! Husband says "make them again but leave the chicken in bigger chunks next time" that was his only suggestion for improving them :laugh: even my picky kid said they were "not disgusting." a compliment, from him ;)

    I make something similar except with those egg roll wrappers, but I never thought of using tortillas! Definitely going on the meal plan for next week!

    I've made them using the solid cottage cheese as well. I know it sounds yucky but they were pretty good. I also sometimes add a little brown rice.
