Dinner in under 15 minutes

Last nights dinner was so good I thought I would share.
I made a Chicken and Quinoa, Veggie stir-fry
A clove of garlic
1/4 tsp of grated ginger (or to taste)
maybe a tablespoon of oil just enough to saute the garlic and ginger
than I added a mix of green beans, carrots, peas a corn
Two heads of baby bok choy
a handful of sugar snap peas
a egg that I scrambled separately
got that nice and hot
threw in the quinoa that I cooked on Sunday (the yield of 1 cup dry cooked)
Seasoned with low sodium soy sauce
And in under 15 minutes I had dinner, plus today's lunch and still some left over.

Sounds yummy....
Did you have your chicken on the side, or stir-fry it with (before/after) the garlic & ginger?0 -
I threw the chicken in with the ginger and garlic, added the veggies (bok choy and egg last) than added the Quinoa and soy sauce.0
