Tangy potato salad

I played with traditional potato salad recipes and came up with something light and tangy that my whole family thinks is really good so I wanted to share :wink:

5 cups of chopped cooked potatoes
4 large dill pickles finely chopped
Any finely chopped veggies you like ( peppers, celery etc)
Bit of chopped fresh dill if you have it (I didn't have any)
1/4 cup chopped chives

Dressing:
1/2 light miracle whip dressing
1/3 cup white vinegar
4 packets Splenda, stevia, or sugar
1 tbsp pickle juice from jar
1 tbsp prepared yellow mustard, or spicy mustard
Salt and pepper to taste


Mix potatoes with onion, any veggies, dill and chopped pickles in a bowl. Mix dressing Ingredients with a whisk and toss into the potatoes. Tastes best if it rests in the fridge for a few hours, or even overnight.

It works out to about 150 calories per 1 cup serving depending on veggies and sweetener choice.
