I just made this tonight, and it was a hit with the whole family!

2 tablespoons olive oil
1 onion, chopped fine
1 teaspoon sea salt
½ teaspoon black pepper
1 cup quinoa, rinsed (have we all jumped on the quinoa bandwagon yet?)
2 teaspoons minced garlic
8 cups vegetable broth (feel free to use chicken broth instead)
5 cups chopped broccoli
1 russet potato, peeled and chopped
10 ounces Spinach (1 frozen package, thawed and drained)
1/8 teaspoon cayenne pepper
1 cup sharp cheddar cheese
Okay, here's what you do ...
Heat olive oil in a large stock pan. Add onion, salt and pepper and cook for 10 to 12 minutes, until tender. Add quinoa and garlic and stir for one to two minutes. Add in vegetable broth, broccoli and potato. Bring to a simmer and reduce heat to low. Cover and cook for 35 minutes. Remove cover and add spinach, salt and peppers. Cook until spinach is wilted.
Remove from heat, and allow to cool. When cool enough to handle, transfer to a blender and puree in batches. Return to the pan and heat to low, add cheese and cook until melted.0 -
Yum! This sounds delicious - I really love soup & am always looking for good soup recipes. Although I love cheese I think I'd pass on that and add some chicken breasts in for added protein and then grate a little bit of Romano cheese (for some added zing!) on top when serving. Also, I would not blend it but keep everything as it is. I like my soup with more texture - makes it feel more substantial to eat.
