Changing the way I eat...

Hey everyone. I recently restarted dieting but I am very sick of doing the yoyo thing. Since I was 14, I have been on and off diets and my weight has gone up and down all through my adult life. I want to put a stop to this and do my last diet, before changing myself completely! I want to change my eating habits. I moved to France from the USA about a year ago and eating habits are quite different here. And the women are all so skinny! I noticed that people don't eat throughout the day like we do, but during mealtimes they will eat a whole bunch of different stuff, including an entree, a main dish and dessert/cheese(and they still stay skinny!). While I was dieting, I was always eating a yogurt or some fruit or some carrots etc in between my tiny meals. This is highly discouraged here. I think that might have been what set me up to fail. Once the diet phase is over, you eat chocolate bars and chips in between meals, as your snacking habit takes over again.
So, what I decided to do is to stop snacking all together and just eat with the family, whatever is on the menu. I need a bit of motivation. I feel unsure and I'd like to be encouraged to do this. I am sure there is no health problems with this sort of diet change, but I am not sure if I will lose weight(even if it's slow, I really don't mind). Do you think it'd work?
