half an acorn squash, baked, with sea salt, cayenne pepper and rosemary
romaine lettuce, cherry tomatoes and balsamic vinegar
    water to drink

I go workout in about half an hour, so I have to keep it kind of light. LOL

I had Amy's organic brown rice and veggies bowl and a baked potato with ff sour cream.

I've had lots of Amy's today!! It was a convenience day I guess! ;) My hubby is home late so I didn't worry about dinner for him. He is actually guest-lecturing at an NYU class! Pretty cool stuff.

You know what is better? Peel and cube sweet potatoes, drizzle with a little olive oil, fresh chopped rosemary, cayenne pepper and sea salt.

Bake on a baking sheet at 350 degrees for 30 minutes, then crank up the heat to 400 for 5-10 more.

Absolutely FABULOUS!!! And good for you too!

Mmm. I love making sweet potato fried. I usually use the cayenne, along with cumin and chili powder for a nice smoky kick! The rosemary sounds good though. Will have to try it. Don't you love herbs and spices?????

1 cup of navy beans, 5 crackers, and small piece of baked chicken, only 75 calories left enough for some sugar free jello for desert.

I figured out that I really need to go to the grocery store because we ate all our food before I went on Spring Break. So dinner was not that great tonigt...

I tried making some stovetop stuffing, but messed it up somehow so I decided to have peanut butter and jelly instead. =(

Couldn't live without herbs and spices!! Especially cilantro, which my husband hates. I grew up in Texas, so everything has cilantro in it! LOL

I also can't live without rosemary, dill, oregano, basil, cumin, chili powder, or garlic! I also LOVE curry.

Almost everything I cook has garlic in it. I go to the Farmers Market on the weekends and buy a little plastic container of peeled garlic that I keep in the fridge. I go through it in about two or three weeks.

Why is your intake so high? I would really like to know.. Is this what the site has given you.. or what you have found on your own with maybe BMR RMR etc... or by what other method? How much weight is your goal to loose a week? I wouldnt mind on having an intake that high, thats for sure!!

I hope you don't mind me answering on your behalf Joanna! She isn't trying to lose anymore weight she is maintaining at her current weight. And remember to lose weight most of us will have around a 500 calories deficit a day, but as Joanna is not trying to lose weight she is allowed to eat those extra calories. Hope this clears things up! Oh and remeber if you want to eat more calories, the other great option is to exercise. I love going to the gym cause then I can normally have an extra 300-500 calories!

I LOVE cilantro and dill. Salsa just isn't salsa without a ton of cilantro.(But how funny! My husband hates it too!!!) And dill, mmmm especially with salmon! Put salmon fillet in aluminum foil, sprinkle it with garlic, dill and lemon slices, fold up foil and bake. OR instead of dill just use fresh rosemary.

Curry is yummy too. I need to make a lightened curry chicken salad soon. When you have a lot of flavors, you don't need extra fat. It's great!

1/4 pound bay scallops with 1/2 cup brown rice and a cup of spinach. The scallops and spinach were sautteed in garlic and olive oil. I only used about a tablespoon for 2 servings. So yummy!

You don't happen to live in the ATL area, do you? We could totally get together and cook!! LOL When I was in grad school, my roommate and I held "Ethnic nights." Once a month, we would have other grad students over, everyone would bring a dish that fit with the theme of the night (Italian, Greek, Thai, Indian), and we would feast!! We would all be so full, but it was so yummy!

We still cook together when we visit each other. It is just one of those things we enjoy doing together. We actually made up the sweet potato recipe together that I gave on page 1 of this thread!
