Thought I'd share an idea for those who may be looking for some ideas. If you like the "fresh" salsas that you find in the vegetable aisle of your grocery store, here is something that I tried this week and really enjoy:

2 - 4 Tbs of fresh salsa ( the type that is chopped fresh and in your grocery veggie/salad aisle)
1/4 cup crumbled goat cheese or feta cheese
1/2 cup rinsed and drained kidney beans or black beans

Eat alone or add to a 1/2 cup of rice and season with salt (Jane's Crazy Salt is my personal favorite) and black pepper.

    I LOVE black bean salsa. Never thought to add feta cheese though... sounds great!!
