Low Sugar, Satisfying Dessert

Here is a dessert that is very satisfying, and raises insulin levels only minimally. It is a very yummy subsitute to apple pie.
1 medium apple, sliced (can peal or leave skin on according to taste)
2 Tbsp slivered almonds, and/or coconut pieces
2 tsp butter
1/4 cup whipped cream
Cinnamon
-Saute the almond and/or coconut in 1 tsp butter until nicely toasted. Remove from pan.
-Add second tsp butter to pan and lightly saute the apple slices until tender.
-Put apple in attractive bowl, and let cool a little. Top with whipped cream, sprinkle with cinnamon and top with toasted nuts/coconut.
Enjoy - at about 350 cals, this is a dessert that if planned for, satisfies my sweet tooth without raising my blood sugar.
If you like you can sprinkle your toasting nuts or coconut with 1 tsp of coconut sugar or maple syrup to add a little more sweetness.
