What do I do with all this chicken??

OK so I made a Whole Roasting Chicken lastnight. I cooked it in oven and when it was done I pulled all the meat from it to have for the week.

I am looking for your your favorite, QUICK recipes, meal ideas etc....

I love chicken wraps, quesadillas etc... What other ideas do you have for me.......????

    pulled BBQ chicken on arnold sandwich thin
    suffed tomato with chicken salad
    chicken and rice

    One of my favorites
    1 toasted english muffin
    2 T of BBQ sauce (1 per slice)
    4 oz of shredded chicken (2 oz on each slice)
    2 T of low fat shredded cheddar cheese
    Place under broiler or toaster oven
    now you have a BBQ chicken pizza

    Mix it with your favorite pasta sauce (especially good in tomato or mushroom based sauces). Serve over pasta, a grain or squash.

    chicken tacos or nachos

    bbq chicken sandwiches

    Mix with Frank's Red Hot Buffalo sauce, place on bed of arugula and top wth blue cheese crumbles.

    Easy chicken pot pie. Reduced fat cresent rolls, reduced fat cream of chicken soup, frozen mixed veggies (thawed) and a little salt, pepper and garlic powder and chicken of course. Just mix everything together put the cresent dough on top and bake til the crust is done.

    This is one of my favorites and I don't typically cook. My husband does all the cooking but when he wants a night off this is what I will make. You can use any veggies that you like and season it according to your own tastes.

    Chicken salad is another option....either on a green salad, or as a sandwich.

    Chicken soft tacos or chicken burritos - simmer the chicken for a couple of minutes with taco seasoning

    Pulled barbecue chicken sandwiches

    Cook up some quinoa in chicken broth with garlic and red pepper flake, steam some veggies, and mix together with some chicken (I also make a sauce with a can of cream of chicken soup and chicken broth, with some extra spices)

    Do something like a tuna noodle casserole, but use chicken instead of tuna

    Ha! I made a roast chicken today too. I also made a pot of homemade black beans. A pot of rice. and steamed assorted veg.
    I will use all this for the next 4 or 5 days or so to make many meals.
    Wraps/. Tacos/ burritos.,, with side salads., easy affordable and good for you.
    I am on a Mexican kick after reading that other thread. Lol
