Don't know what to eat!!!

I have been diagnosed with a genetic disorder where I do not process starches and can't utilize glucose. Also I have to eliminate fat due to my sky high triglycerides. My doc tell me NO starch, low sugar and fat. I find it difficult to to find anything to eat besides chicken, fat free dairy and select veggies. Any suggestions? ;''(

Roast salmon with sauteed asparagus, drizzled with either balsamic vinegar or lemon juice!
Huge salads with vinegar instead of normal dressing
Stir fry, with lean pork loin strips, broccoli, water chestnuts, bean sprouts, bell peppers, carrots, cauliflower, zucchini, and a soy-ginger-lemongrass sriracha based sauce.
Turkey burgers (check the fat level) with nonfat greek yogurt, ranch mix seasoning, pickles, mustard, tomato slices, wrapped in a couple iceberg lettuce leaves.

Thanks, it does sound south beachish except the fat! Doc said no salmon because of high fat content. I didn't think that type of diet was good for long periods but what can I do? Getting quite discouraged!
