I know that sodium causes water retention but is that when you have like 4,000-5,000 mg a day or is that when you fill up all the way to you 2,500 max on MFP? I usually fill up my sodium all the way as I am still learning and trying to adjust to eating less sodium but do i ONLY need to be worried if i am going over my 2,500 a day?

Generally you shouldn't go over the 2,500 mark but try keep it as low as possible. Sodium is in EVERYTHING! You can easily blow your sodium out of the water by noon. I'm hypertensive so I have to keep sodium down but it's hard when I travel for work and make bad food choices.

Look up the DASH diet (dietary approaches to stop hypertension). The food plan is pretty generic but healthy overall. The PDF book can be found in the following link: www.nhlbi.nih.gov/health/public/heart/hbp/dash/new_dash.pdf
