Broiled Salmon Salad

4 oz Walmart Wild Salmon filet (110 cals)
3 C. salad greens ( I like 50/50 spinach and spring mix) (20 Cals)
1 Strip Oscar Mayer Center Cut Bacon fried crisp, drained well, crumbled (25 cals)
2 Tbsp reduced fat cheese (36 cals)

Sprinkle salmon with favorite seasoning and add 1 tsp Smart Balance buttery spread, broil, turning once and adding seasoning and Smart Balance, cook until done.

Prepare bed of greens, add bacon and cheese; top with salmon. Add calories for what ever dressing you use.

As written, this meal is under 200 calories. I like to add a few olives and slices of tomato.

I also make my own healthier ranch dressing. I use equal parts Smart Balance Mayo and Smart Balance Sour Cream, Ranch mix and enough skim or 1% milk to make the dressing a proper consistency. Tastes great and doesn't have that gummy no-fat feel in my mouth.
