Food Triggers = Need advice/opinion/motivation

Ok, so I am really proud of the fact that I have started a garden and doing A LOT of DIY projects.
I now am growing tons of veggies and fruits ....I make my own laundry soap and dog bisqcuits....
Well anyway long story short, I wanted to branch out and start making recipes i normally buy.
For instance I started making my own bread.
Yesterday i made my own spinach and goat cheese pizza... it was AMAZING.
I even made the crust.
So here is my dilemna : How do you get into great recipes and NOT put on weight or blow your diet??
My DIY fixation is really about saving money, knowing whats in my food, and eating healthier.
However I am running into some issues:
1. How do i calculate calories???
2. How do I calculate portions?
3. How do I avoid eating MORE.... I know this sounds stupid, but trust me...between testing, tasting, making, finished product....its easy to lose how much you ate.
Any thoughts or suggestions would be great
Or even DIY advice.
For those of you wondering what my diet actually is.
I do not want to cut foods out of my life.
I would rather eat what I want in moderation and limit my intake.
I have a 1200 calorie with under 100 carbs goal for everyday...with limited activity if its a work day.
