Salads

Options
I was luckily and got quite a bit of romaine lettuce this week, so it would be stupid for me not to use it.

I always have the same salad (lettuce, a few cut up chicken nuggets and a little but of ranch) but I really want to try other recipes so I don't get bored this week.

So what salad combinations do you enjoy?

    My favourite salad:

    -romaine mixed with raw spinach (only 7 calories a cup!)
    -diced red pepper
    -diced red onion
    -diced avacado
    -shredded carrot
    -feta cheese-or-a sliced boiled egg
    -balsamic vinagrette-or-pesto dressing

    I have been copying Panera's fruit and chicken salad...

    grilled chicken(I used leftovers from another dinner)
    strawberries
    blueberries
    mandarin oranges
    fat free poppyseed dressing
    nuts/craisin mix

    try adding roasted vegetables, cooked quinoa, polenta squares (cooked, cooled and cubed) or sprouts

    Thin sliced pear, red onion, crumbled feta - with a light balsamic dressing.

    Taco salad: corn, beans, cilantro, chopped tomato, red bell pepper, onion, a little bit of cheese - use salsa as dressing

    Chef salad: hard boiled egg, ham or turkey, green onion, carrots. red bell pepper, olives, etc....

    I love salads with grilled chicken, fruit (strawberries, blueberries, apples, etc.), nuts (walnuts, pecans, pine nuts, etc.), cheese (gorgonzola, bleu, etc.), and a light vinegarette (raspberry, cider, wine, etc).

    Never thought of garbanzo beans on my Greek salads (though I've put them on salad bar salads.

    I eat at least one big salad a day, everyday. And have for months, and it's crazy how much better I've felt since doing this. Usually my go-to salad is romaine, spring lettuce mix, some crumbled light goat cheese, two slices of tomato cut up, 1-2 strawberries cut up, 1/4 of a yellow or orange pepper, a bit of red onion, and 1 tbsp of hemp seeds. Dressing is usually a Renee's (low calories, GF and YUMMY!).

    I usually mix a couple greens together - like add spinach to your romaine for instance
    Bell pepper (red is my favorite but I also will use yellow and orange or all three)
    Some sort of protein - tuna, chicken, lean ground turkey (cooked), salmon - you can get it in a pouch
    Cucumber
    Tomato
    Instead of dressing, I use a serving of cottage cheese

    cheese torteillini topped on lettuce, kalamata olives, banana peppers, red onion, mushrooms, bell pepper, feta cheese with lemon juice olive oil red wine vinegrette and some oregano/garlic powder. also good with a ranch dressing

    A mixture of whatever lettuce you have on hand and chopped cabbage.
    Chop up some carrots, celery, onion, tomatoes.
    Add in some nuts for protein and healthy fat.
    Asian vinaigrette dressing.
