Why do I gain weight when on my feet 8 hours

Ok every Saturday I work anywhere from 5-8 hours in a kitchen and on the move... I eat breakfast at home usually toast milk and ice water then some type of fruit for a snack then lunch at home. I drink anywhere from 2/3 bottles of waters while at work even more at home... The past several weeks I have been noticing that after every shift I seem to gain 5 lbs every time then takes me days for that number to come back down.. I just don't understand I don't record what I eat everyday but I usually eat the same thing a few days in a row after I recorded it once so I know what i had and how many calories im eating... On Saturdays after work I usually head to the gym and do any where from 3.12 miles on up.. Can anyone explain why I gain so much in one day? It's difficult to be happy about my little successes during the week when this happens every Saturday! Please help thanks in advance
