Sweet Potato Hash

This is great for breakfast, or anytime. Serve as a side dish, toped with perfectly basted eggs for a GREAT breakfast.

Ingredients:

1.5 medium sweet potatoes, peeled and cut into bite sized cubes
1 yellow onion, diced
8 strips of low-sodium, mild sugar cured bacon (or use whatever kind you want)
2 apples (spartan, granny smith, ambrosia all work great) cored and cubed (about the same size as the sweet potato)
4 Tablespoons pure maple syrup
1/2 teaspoon cayenne pepper
Zest and juice of one small lime
Ground black pepper to taste

**You may wish to add salt, I never add it to my cooking.

Directions:
Place the bacon in a pan and cook until slightly cripy. Remove from pan and set aside on cutting board.
Add sweet potato cubes into bacon drippings, cover with a well fitting lid and let cook until starting to soften. Stir occasionally to even out cooking/prevent burning.
Mix in diced onion and cubed apple. Mix well with sweet potato. Replace lid and continue to cook.
Chop up bacon into small pieces.
As onions become soft and almost transparent, mix in maple syrup, cayenne pepper and ground black pepper. Next grate lime zest over entire pan, and squeeze the lime juice over as well.
Mix in bacon.


My husband and I split this entire recipe yesterday morning, topped with over-hard eggs. BUT, it was a LOT of food, and could have easily fed 4 or 6 with reasonable portions.
This was a great combination of sweet, tart and spice.
