Vegan: Orzo with White Wine & Mushrooms

This is from "The Everything Vegan Cookbook", which is full of wonderful recipes. I made this tonight and it's amazing!

Orzo with White Wine and Mushrooms - Serves 4

1 cup sliced mushrooms (I used portobello)
1 yellow onion, chopped
3 cloves garlic
2 Tbls. olive oil
1 1/2 cups vegetable broth
1/2 cup white wine (I used Moscato)
1 1/2 cups orzo
2 Tbls. vegan margarine
2 Tbls. nutritional yeast or vegan Parmesan
2 Tbls. chopped fresh basil or parsley
Salt & Pepper to taste (I didn't add any - tasted wonderful without)

1. Heat mushrooms, onions, and garlic in olive oil until just soft, about 3-4 minutes.
2. Reduce heat and add vegetable broth, white wine, and orzo. Cover and simmer for 8-10 minutes until orzo is cooked and liquid is absorbed.
3. While still hot, stir in margarine, nutritional yeast, and fresh basil or parsley, and season to taste.

Per Serving: Calories: 302; Fat: 13g; Sodium: 439mg; Fiber: 2g; Protein: 6g (may vary depending on mushrooms and wine)
