need help with side dishes

i am making my menu for the week and i am stuck on what sides to fix.

what veggie and/or side dish would be good with thai chicken lettuce wraps (they already include lettuce, cabbage, shredded carrots and red onion)?

what veggie and/or side dish would be good with shrimp enchilada verdes (they already include green pepper, green chilis, onion, corn, salsa and avocado)?

the rest of the menu is:
tuesday - manicotti alfredo
cooked sweet carrots
cherries

wednesday - breaded wall-eye
baked sweet potato fries
green beans
seedless red grapes

thursday - thai chicken lettuce wraps with peanut butter drizzle
?
kiwi

friday - eat out at 'c level'

saturday - eat out at the casino (all-you-can-eat-crab)

sunday - shrimp enchilda verdes
?
melon and banana salad
ice cream cake (birthday party)

last week's veggies/sides were:
crab-stuffed mushrooms
garlic-grilled potatoes
spinach salad
baby carrots
celery with blue cheese
green and yellow beans
yellow carrots, broccoli and purple cauliflower
house salad with cucmbers, tomatos, red onion
salad with yellow peppers
mashed sweet potatoes
ricotta-stuffed tomato
steamed asparagus with butter and sea salt

    Maybe some sort of herbed rice with the thai chicken rolly things? Like a cilantro/lime/jasmine or basmati rice combo.

    I just made myself hungry.

    On Sunday, the Mexican day.....Sauteed peppers and onions. I love this!

    As for the Thai chicken wraps, What about a bunch of veggies: snow peas, bok choy, nappa, shredded carrots, and other asian veggies lightly stir fryed with a little soy sauce or tamari.

    I agree with a rice dish for the lettuce wraps. You could do brown rice if you wanted to keep it healthier. For the enchiladas, what about mashed black or pinto beans? I saute them with onions in a bit of vegetable oil, add chili powder and whatever other latin type spices you want, then add water or vegetable broth until they are the consistency you like.

    For the lettuce wraps - I would go with brown rice with some veggies stirred in (I put edamame in with mine - but you could do peas and peppers)

    For the enchiladas...sauteed yellow squash and zucchini? I always like the splash of color.

    sauteed summer squash, zucchini and peppers sounds great; we haven't had that for a while. :) i hate peas and snowpeas, but bacon, edamame and black beans in a cilantro lime rice sounds like a perfect side for the thai dish.

    samantha, do you have a curry recipe that is your favorite? i'd love to include something like that for next week's menu.

    When I make curry I make brown rice with lime zest and basil for the side. Toast the rice in some oil, then add water or stock and zest a lime in at that point. Then @ 5 min before it's done add a "bunch" of rough chopped basil. It's lovely, I got it from Rachael Ray.

    grilled veggies with some of the same spices you're using for your enchiladas sounds like a good idea.
