Low Fat Quiche Recipe

I have a low fat quiche recipe that I have created in my own kitchen. I do not use heavy creams or cheese, but my coworkers always request the same treat when it's my turn to bring breakfast. Let me know what you think.

1)eggs-1 dozen

2)low fat milk-2cups (or substitute with just water to avoid extra calories)

3) EVOO-1 tablespoon

4) fresh basil (2 sprigs)

5) cremini mushrooms (3 reg. size ones)

6) onions (1 small)

7) green onion (2 tablspoons)

8) cilantra (2 tablespoons)

9) grated carrots (1 whole small)

10) 1 potato (dice or grate really small to avoid extra cooking time)

11) salt and pepper to taste.

Just cut up all the veggies and hand whisk everything together and bake for about 1 hour in the oven @ 400 degrees. One batch will last the entire week. Please feel free to substitute with your favorite veggies and you decide how much you want to put in there.
