I made this for dinner tonight and it was amazing!
These were my ingredients:
4 zuchinni raw with peel
1/2 jar ragu Light
1/2 pound groud turkey
4 oz reduced fat ricotta cheese
2 cups shredded part skim mozzerella cheese
Chop the onion. Brown the ground turkey. In the same pan cook the onions. Heat the spaghetti sauce in a sauce pan. While this happening, preheat the oven to 375. Slice the zuchinni long ways in about 1/4 in size slices. When the meat and onions are done combine them in sauce pan. Line the bottom of a 9x9 pan with 4-5 slices of zuchinni. Spread 2 spoonfuls of ricotta cheese on zuchinni. Spread a layer of mozzerella over the ricotta. Then spread a layer of the meat sauce over the mozzerella. Repeat the layers until the pan is almost full. I put one more layer of zucchini on top and sprinkled the rest of the mozzerella cheese on top of that. Bake at 375 for 30 minutes.
Serves 6. Calories about 250 per serving.
So, its your basic lasagna with zucchini instead of noodles. And it was amazing. All the lasagna goodness without all of the lasagna badness.
PS - I am not a cook book writer. I am an accountant. Please keep that in mind
