Stew with Tortellini

1 Tbsp fresh rosemary
1 medium raw carrot, diced
1 medium raw onion, diced
3 cups raw spinach
1 large raw, yellow bell pepper, chopped
3/4 cup cooked tortellini pasta with cheese filling
9 oz raw ground beef, 75 % lean
1 cup canned, fat free, lower sodium beef broth


Prep & Cooking Time: 1 hr. 0 min.

Yield: 4 servings

Directions:

In a large pot, bring water, broth and rosemary to boil
In another pan, brown ground beef to a crumble texture, rinse excess oils from meat and set aside
In a small pan, using non stick cooking spray, saute onions, carrot and yellow pepper for 3-5 minutes on medium-low heat
When water and broth are at a boil, reduce heat to medium, add tortellini, spinach, meat and sauteed vegetables
Let all ingredients cook for 10-15 minutes, stirring frequently


Each serving provides:

Total Fat: 5.35 g Protein: 12.79 g
Sat Fat: 2.19 g Fiber: 4.56 g
Cholesterol: 26 mg Sodium: 242 mg
