Please help! Food intolerances taking over my life!

Dear Community,

Im in desperate need of recipe ideas. I recently found out that I am highly intolerant to gluten, soy, corn, potatoes, tapioca, amaranth, etc....and pretty intolerant to rice, quinoa, casein, and coffee. In addition to this, I have an autoimmune disease, most likely Hashimotos, so my doctor told me to stay away from the high intolerant foods forever, and stay away from the others for 6moths-1year (in addition to these things, I need to avoid chocolate, dairy, and peppers to name a few)!!!! :( Im also a hardcore vegetarian and have been for so long that forcing myself to eat meat would cause me more distress than I currently am from being starving lol.

If you have any recipes beyond plain raw fruits, salads, and beans, please please please let me know! Thanks in advance for your support♥ :)

    Have you had the test for Hashimoto's? I would be skeptical of a doctor who tells you that you probably have Hashimoto's, who hasn't told you whether or not you have it, when the test is easy and cheap. How about a TSH test to determine whether you're hypothyroid? It would make me wonder about the drastic dietary changes that this doctor has recommended. Is this person a doctor, or some other kind of health practitioner?

    I was a vegetarian for a long time and didn't have any problem eating meat again. You may not need to do that, but starving is not a better option. Be gentle with your precious body. We only get one.

    Are you the kind of vegetarian that eats eggs?? If so some egg dishes like omlets & frittas (made with water instead of milk might be an option for you & you can dress them up with veggies & stuff that you like. Good luck to you with the list of foods to avoid & sounds really difficult & I would worry about your nurtitional intake. I would also recommend a second opinion from another Dr just in case I used to think it was disrespectful until my neurologist told me otherwise sometimes they like a second set of eyes in case something was missed also ask your dr for a referral to a nutrionist that deals with food allergies/intolerance. I'm sure they have seen it all & will have some ideas.
