How much do you eat on the days of your long runs?

My calorie intake is usually 1400-1600 cals. But on weekends, I am up to one 9mi day, burning over 1000 cal. I don't take that into consideration for pigging out that day, and try not to the day before but do eat an extra serving of pasta or carbs to help get me through. I will be doing this one long run once a week throughout the whole summer, what do you suggest?
