Meat-less Monday!

I wanted to share some information with everyone. I recently have been reading about how alot of cities and companies have been proclaiming Mondays to be Meat-less. What they are doing is encouraging restaurants to offer healthy alternatives to carnivorous dishes one day a week. The movement is said to help general health of Americans as well as the environment. From the perspective of a dieter, it is a great way to introduce alternative proteins into your diet, and just explore ingredients and foods that you may have not eaten before. PLUS cutting meat out of a day or two a week saves money.
Anyone up for the challenge of cutting meat out on Mondays? If you are, post a reply, and I will post some vegetarian recipes often!!

Sounds too hard - I love my chicken.

count me in, I'm on a 2 week detox right now and can't have any meat (or dairy) for the entire 2 weeks, I think I can definitely keep going on Mondays after that. Its a great idea!0

My wife is a vegetarian, and we usually eat the same stuff, so I am pretty much meatless at least 4-5 days/week.0

I've heard that you should only eat meat every two or three days anyway so this is a brilliant thing. I don't have any meat in because i've used it all up so for about five days I was living on carbs and vegetables. Lush!0

We had a meatless Wednesday this week. I made bean stew with spinach and a salad on the side. Hubby didn't even realize he wasn't having meat! I try to do this once a week in some form or fashion but I can't be held to a particular day. It depends on what is in the fridge and freezer.0

Sounds great! I am trying to do at least one meatless meal a week (not necessarily Monday, just whatever fits easiest into meal planning). My usual go-tos for meatless meals are breakfast for dinner (eggs or omelets without meat) or Mexican with black beans (taco salad, these amazing black bean and corn quesadillas from allrecipes.com). Sometimes we'll do pinto beans with other vegetables.0

I'm also vegetarian, so my husband tells everybody he is "part-time vegetarian" since he eats what I eat when we are together.0 -
I made this on Monday for some dinner guests. Very satisfying, and a huge hit.

I made a few changes. Whole wheat pasta (used fusili), fat free milk, and I used half reduced fat mozzerella and half asiago cheese (good asiago is very strong in flavor). I also used all white and portobello mushrooms. This cut the calories down to around 375. Plus, the portions were HUGE, so I ate 3/4 of a serving.
Make sure to constantly whisk the flour and milk together in the sauce. Also, the mushrooms take a bit longer to cook. Cook 'em until there is just a little liquid left in the saute pan. I added some smoked paprika to the mix as well.0 -
