Recovering from an ED & having a hard time losing weight.

Hello! So I have been trying to lose some weight / tone up. For the past month or so I have been eating clean and working out at least 3 - 4 times a week (both strength training and cardio) but I have NOT seen any results. If anything, Im gaining weight.
A little background - I am recovering from an eating disorder so I know that my metabolism has been slowed down from being in starvation mode for almost 2 years.
I am only trying to lose around 20 - 30 pounds and am currently 168 and 5'10" (so still a healthy weight).
I have opened my food diary (although as of late I have not been keeping up with it as well) if that helps with the input.
For me it is really scary to eat over 1,000 calories a day so I want to make sure that I AM eating enough but also not so much that it will stunt my weight loose.
Any input on my situation would be helpful.
